Ripe fruits contain sugar, so ripe fruits taste sweet. Raw fruits contain organic acids. Organic acids are converted into sugars in ripening fruits. The main white matter of the fruit is starch. Starch is not sweet. As the fruit ripens, starch is also converted to sugar. So ripe fruit is usually sweet to eat.
