Artificial or Chemical preservatives:
Generally, three types of artificial preservatives are available-
(a) Antimicrobial agent (b) Antioxidant agent (c) Chelating agent.
(a) Antimicrobial agent: For example: benzoic acid and sodium benzoate, sorbic acid and potassium sorbate, calcium propanoate, nitrate and nitrite salt, sulfite, sulphur dioxide etc.
(b) Antioxidant agent: For example- sulfite, vitamin E, vitamin-C, BHA (Butylated hydroxy anisole), BHT (Butylated hydroxy toluene) etc.
(c) Chelating agent: For example-citric acid, lactic acid, ascorbic acid and EDTA.
