For gallic acid in amlaki.
Amlaki juice is acidic and sour to eat as it contains a large amount of ascorbic acid (Vitamin-C) and other organic acids.
But gallic acid’s religion is that it tastes slightly sour at acidic pH, but if the pH rises to near neutral pH, it tastes sweet for a long time. As the pH of water is 7, drinking water after eating Amalki gives a sweet taste.
Amalaki contains a lot of L-ascorbic acid. We know it as vitamin C. When this L-ascorbic acid is exposed to air and light, its oxygen moiety reacts to form water. The reaction produces dehydroascorbic acid. This is why these two come together first in the mouth. In the presence of water in saliva, dehydroascorbic acid is converted to diketogluconic acid and precipitates. The rest of the L-ascorbic dissolves in the water.
